Peter Themis Assimack was born in 1961and attended the University of Florida. A certified public accountant by profession, he served as president of the Tarpon Springs Chamber of Commerce, treasurer of the Board of St. Nicholas Greek Orthodox Cathedral, member of the Tarpon Springs and New Port Richey Rotary, and member of the Florida Conservation Association. Assimack was elected president of the American Hellenic Education Progressive Association (AHEPA) and volunteered much time to the organization. Following his death in 1996, the Tarpon Springs Chamber of Commerce named its fishing tournament in his memory.
